We arrived in Pader in the dry season. One immediate challenge was the lack of food variety in the market, particularly of vegetables. Although there is more selection in the rainy season, even now we do not have access to all the kinds of food we have at home. Another issue is meat - we often only eat meat about once a week, since we have to buy it early in the morning, and honestly...we prefer to sleep a little bit longer than to get up early and go to the butcher!
So from early on, we sought different ways to make different foods based on what was locally available. Below are some of the results:
